
I made this for lunch today. It was the first time in quite awhile that I’ve purchased actual raw fruits and vegetables and cooked them for myself. Man, it was tasty. I’m going to try to start eating more fresh meals like this. Steve and I saw the movie King Corn last night (which does for the corn industry what a Super Size Me did for the fast food industry. I reccomend it). it got me thinking more about how lazy I am with my diet. I’ve always had plenty of friends and family that were willing to make me amazing meals, and as a result I never really learned to cook. So from now on I’m going to try to cook actual meals more often instead of just microwaving or defrosting things. The last two weeks I’ve been eating pretty poorly especially, which happens when I’m under a lot of stress or real busy. (Although interestingly, when I’m incredibly stressed out or worried I lose my appetite completely. Go figure.) Eventually I’m going to start using the cook books I have laying around, but just to start I’m simply going start buying a lot fruits and vegetables I know I like and combining them in whatever way strikes my fancy. Like today, in the picture. That was delicious, and all I did was fry up some of my favorite veggies with some spices and tofu. Simplicity. Yes.
Today at the store I bought twice as many vegetables than I thought I would actually eat, because I know I’m not eating enough. I’m not trying to go vegan or anything (Although I already avoid all meats but chicken) I’m just trying to eat more healthfully, which shouldn’t be too hard. It should be delicious.
